National Institutes of Health, people with macular degeneration could slow the disease by getting 500 mg of vitamin C, 400 IU of vitamin E, and 80 mg of zinc every day.

 

BROCCOLI

 

Broccoli contains sulforaphane, a cancer-fighting compound that is also a powerful antioxidant.

According to researchers at Johns Hopkins University, human retinal cells treated with sulforaphane were protected from oxidizing free radicals for several days.

Other cruciferous veggies like cabbage, kale, mustard greens and turnips are also rich in sulforaphane.

The right foods are obviously those with good nutritional value, but the way they are prepared can have a huge impact on your health.

Some cooking methods will preserve the food’s nutrients and flavour. Others can actually diminish nutrient content and create harmful substances within your food.

Do you microwave? Many believe microwaving is a fast and convenient way to cook food without a lot of extra oils. But it is also thought that microwaving can change the chemical structure of food in unknown, potentially negative, ways. The process may also destroy fragile nutrients. Our advice is to avoid it wherever possible.

It is generally preferable to cook foods at lower temperatures than higher temperatures. This is because the nutrients are better preserved. High heat can cause the oil you use to be damaged (oxidized), thus posing health risks.

Outlined below are some of the most popular cooking methods. We start with the healthiest methods and end with the methods best avoided, if possible.

 

1. Eat Your Foods Raw where possible

It’s not exactly a cooking method, but it is a very healthy way to consume many of your favourite foods. Raw foods are higher in vitamins and nutrients - these are destroyed by cooking.


2. Steaming

Put a little water in a pot, put in a steamer basket or colander, and add your food. The water should not touch the food. As the water boils, the steam will gently cook your food. Don’t cook your food for too long (vegetables should still be brightly coloured, and slightly crunchy when they’re done). You may, if you wish, add some spices to the water to flavour the foods as they steam. This method works especially well for fragile vegetables like leafy greens, and fish.

3. Poaching

Poach various foods by simmering them in a covered pan in a little bit of water or broth.


4. Baking and Roasting

Baking is a healthy way to cook. It is preferable to use a lower temperature, and a longer cooking time, than a higher temperature to cook the food more quickly. You can bake meat, fish, poultry, veggies, bread, fruit and anything else. To keep in some of the moisture, keep your baking dish covered for part of the time.


5. Stir-Frying

If you must fry, stir-frying is a fast, relatively healthy way to cook. Chop your meat and veggies into small, uniform pieces, add a little oil or broth to a pan, and then stir the foods until they’re just cooked through. To preserve the nutrients in the vegetables, cook them only slightly.

6. Braising

To braise a piece of meat or fish, brown it slightly in a pan, then cover it with a small amount of liquid such as broth. Cover the pan, and leave the food to slowly finish cooking.

 

7. Boiling

Boiled foods are healthy because no harmful substances form when using this cooking method. However, nutrients may be lost when foods are boiled. Steaming is a preferable cooking method.

 

8. Sautéing

Sautéing involves cooking foods in a small amount of oil, or butter, on your stovetop. It is an acceptable form of cooking, although it does pose the problem of oxidizing oils. You may replace the oil with some broth instead, and don’t turn the heat up too high.

9. Grilling and Broiling

People love to grill their foods, but there are some potential problems to be aware of. Barbecue grill smoke contains cancer-causing chemicals known as polycyclic aromatic hydrocarbons. And heterocyclic amines form when food is cooked at a high temperature, such as those used in grilling and broiling. These chemicals have been linked to cancer.

Advanced Glycation End (AGEs) products are also produced when meats are cooked at high temperatures. AGEs, according to researchers at Mount Sinai School of Medicine in New York, build up in your body over time leading to oxidative stress, inflammation and an increased risk of heart disease, diabetes and kidney disease.

10. Frying

Frying foods is the absolute worst way to cook your foods. The high temperatures produce cancer-causing heterocyclic amines, along with AGEs. Meanwhile, frying exposes your foods to large amounts of oxidized (rancid) vegetable oils, which then soak into your food and wreak havoc in your body.

So, choose a cooking method that suits the taste-buds yet ensures the good health of your family.

Aspirin kills 20,000 Americans every year

Common over-the-counter painkillers such as aspirin kill around 20,000 Americans every year, and another 100,000 end up in hospital as a result of taking the drug, new research reveals.

Painkillers known as NSAIDs (non-steroidal, anti-inflammatory drugs) are far more dangerous than people have been told, and can cause life-threatening gastrointestinal (GI) bleeding, stomach perforations and ulcers.

More than 14 million Americans regularly take an NSAID for their arthritis pain alone, and around 60 per cent of these will suffer gastrointestinal side effects – and will probably never blame the drug, researchers from the Eastern Virginia Medical School estimate.

Researchers realized that patients weren’t associating the painkiller with their stomach problems when they carried out a survey among patients at a clinic that specialises in gastrointestinal disease.  Around one in five of the patients was taking an NSAID such as an aspirin, and was not reporting the fact to medical staff because they didn’t regard it as significant.

“This reflects a common misperception that these medications are insignificant or benign when actually their chronic use, particularly among the elderly and those with conditions such as arthritis, is linked to serious and potentially fatal GI injury and bleeding,” said Dr David Johnson, one of the researchers.

New Test for Melanoma

According to the National Cancer Institute, more than one million new cases of skin cancer (including basal cell and squamous cell) will be diagnosed in the US this year. Also, that one type of skin cancer, melanoma, is by far the most deadly. It is estimated that around 60,000 new cases of melanoma will be diagnosed this year, and more than 8,000 people will die from the disease.

However, a report published last fall in The New England Journal of Medicine suggests that sentinel-node biopsy can improve some patients’ chances of survival.

CURRENT MELANOMA CARE

Melanoma is graded in stages (0 to IV), where stage 0 generally involves only the top-most layer of skin… in stages I and II, the tumors are getting progressively thicker… in stage III, the cancer has spread beyond the tumor to one or more lymph nodes… and stage IV involves distant metastases, where the cancer has spread to other parts of the body.

Except in large, research-oriented cancer centers, the treatment for the early stages of melanoma usually consists of removing the tumor (cutting it out of the skin), followed by periodic check-ups to see if any of the lymph nodes are swollen, which is a signal that the cancer may have started to spread. If that happens, the patient undergoes a lymphadenectomy — the surgical removal of the lymph nodes in the area (such as the armpit, groin or neck), which are then studied by a pathologist. If the cancer does not show signs of spreading, the patient simply remains under a doctor’s supervision. But if the cancer is thought to have spread, additional treatments — radiation, chemotherapy, etc. — are often required.

The problem with this system? In some cases, the melanoma has already spread to the lymph nodes, even though the lymph nodes aren’t swollen enough to be noticeable. That makes the “watch-and-wait” approach risky — and makes sentinel node biopsy an attractive option. In those who turned out to have nodal metastases, survival rate after delayed lymphadenectomy hovered just over 50%, while in those that had sentinel-node biopsy followed by immediate lymphadenectomy, the survival rate soared to 72%.

THE SENTINEL-NODE BIOPSY

With sentinel-node biopsy, a “tracer substance” (a radioactive substance and/or dye) is injected at the melanoma site prior to the tumor’s removal. The physician then monitors which lymph node the material moves into first — this is the sentinel node. During the surgery to remove the cancer, this node is also taken out so that it can be checked for cancer cells. If none are found, it’s less likely the cancer has spread. If cancer cells are found, however, a more radical lymphadenectomy would be in order.

According to Andrew Spillane, MD, a surgical oncologist (and sentinel-node biopsy expert) at the Royal Prince Alfred and Mater Hospitals in Sydney, Australia, the major finding of the study is that there was a very significant difference in survival between the two pre-selected patient groups. (He also points out that the fact that the comparison of the two groups was not randomized has raised some criticisms of the study, but a randomized trial of the groups would have been impossible to achieve.) Plus, sentinel-node biopsy is performed when fewer lymph nodes are involved and usually less bulky than they would be during a delayed lymphadenectomy. This can mean a technically easier operation with potentially fewer complications. “These potential benefits have to be compared to the usually minimal risks associated with the sentinel-node biopsy procedure for all patients with moderate and high-risk melanomas,” said Dr. Spillane.

While only 16% of the sentinel-node-biopsy patients had cancers that had spread, the higher survival rate (that astonishing 72%) due to earlier detection, combined with the decreased risk of complications, are enough to make sentinel-node biopsy a diagnostic treatment worth asking about.

WHAT YOU NEED TO KNOW

According to Dr. Spillane, if you or someone you care about has recently been diagnosed with melanoma and the cancer is greater than 1 mm thick, you may want to investigate a sentinel-node biopsy. That means not only asking your doctor about the procedure, but also asking how experienced the entire team — surgeon, nuclear medicine specialist and pathologist — is with the procedure. Melanoma is serious business, so don’t hold back — if your physician seems hesitant, it might be time to find someone else to work with. After all, early diagnosis and treatment are key to beating the disease — and efficient, effective prognostic tests like sentinel-node biopsy to help determine treatment can up your odds.

Ways to reduce your risk of the disease in the first place. It’s simple:

1. Avoid excessive sun exposure and sunburn. Use a sunblock with a minimum SPF of 15, every day if you’ll be outside more than just a few minutes.

2. Pay attention to your skin. Check yourself regularly for any new moles or lesions, especially those that ooze, bleed or become ulcerated. Get regular skin-cancer screenings.

3. If a mole is changing in size, shape or color — for example, if a mole seems larger or has jagged edges — have it examined and biopsied.

Avoid eating Farm-Raised Salmon

There should be nothing unhealthy about regularly eating salmon.  It is a heart healthy food.

However, you shouldn’t eat any particular food every day. It can cause an allergy to that food. In fact, doctors specializing in food allergies report that many people are allergic to their favourite foods for this very reason.

 

An important point regarding the eating of salmon is to strictly avoid the farm-raised variety as it could very well be detrimental to your health.


According to laboratory tests commissioned by Environmental Working Group, farmed salmon is the most PCB-contaminated source of protein in the U.S. food supply. These fish are also known to have harmful levels of mercury, DDT, and dioxin.

 

And that’s not all. Farmed salmon are fed corn and soy meal (not exactly the natural diet of a salmon). Because of this unnatural diet, these fish have far more unhealthy omega-6 fatty acids and fewer healthy omega-3s than wild salmon. And it has been shown that farmed salmon consume more antibiotics by weight than any other livestock.

 

So, instead of farm-raised salmon, be sure to insist on wild Alaskan salmon. These fish live in some of the most pristine waters on earth. They have extremely low levels (usually not a trace) of mercury and PCBs. And they are rich in heart-healthy and brain-boosting omega-3s. You can find canned wild Alaskan salmon in most grocery stores, and most health food markets will have fresh fillets.

Vitamin C has huge benefits

Vitamin C is good for you… its importance dates back to early explorers crossing the ocean by ship who suffered from something called scurvy — caused by a deficiency of vitamin C.

There is now a continual stream of research on vitamin C and its related health benefits — which include antioxidant, anti-inflammatory and anti-aging properties, along with the fact that it has been shown to be a heart-health booster.

Naturopathic physician Mark Stengler, ND, provides the latest thinking on the many positive attributes of vitamin C.

 

HEART HEALTH

It has great value in reducing risk for cardiovascular disease, as shown by numerous research studies. Nurses’ Health Study which followed more than 85,000 women for up to 16 years, demonstrated that a higher intake (in this case, more than 359 mg/day from dietary sources and supplements) reduced cardiovascular risk by 27%… and an analysis of nine other studies tracking more than 290,000 adults that showed a 25% reduction in risk in those who took more than 700 mg of supplemental vitamin C, compared with those who took none.

Not only has vitamin C been shown to decrease risk for heart attacks, it also seems to reduce damage following one. In a study called the Myocardial Infarction and Vitamins (MIVIT) trial, researchers found that patients who suffered an acute heart attack and then supplemented for one month with 1,200 mg of vitamin C (along with 600 mg of vitamin E) after an initial IV infusion of vitamin C had a reduced rate of complications from the heart attack.

“This doesn’t surprise me,” Dr. Stengler told me, “since vitamin C has so many protective functions, including increasing blood vessel flexibility (so they do not rupture as easily) and preventing the oxidation of LDL cholesterol.”


IMMUNE BOOSTING

In addition to acting as a powerful antioxidant and helping protect the body from free radical damage, vitamin C also supports immune function. It enhances the activity of white blood cells, the body’s first defense against pathogens. And it improves immune response partly by activating an antiviral chemical produced by the body called interferon.

Additionally, vitamin C helps to regenerate other antioxidants, including vitamin E, by acting as a “recycling service” for antioxidants in the body, causing them to re-circulate in the bloodstream and thus delivering “double duty” protective action.

OTHER HEALTH BENEFITS

Vitamin C is…

a.. A collagen builder. Collagen is an important structural component of bones and tissues


b.. A detoxifier. Vitamin C is involved in the production of bile acids, which carry toxins out of the liver.

c.. An agent for longevity. Two major studies have associated vitamin C status with longevity. In a study of more than 19,000 adults, those with the highest blood levels of vitamin C had about half the risk for mortality compared with those with the lowest levels of vitamin C in their blood.

RECOMMENDED DAILY ALLOWANCE


Though the current recommended dietary allowance (RDA) for vitamin C is only 90 mg for men and 75 mg for women (add an extra 35 mg for smokers), Dr. Stengler believes a far higher intake is beneficial. “For general prevention and overall health, studies suggest 400 to 500 mg daily,” he said. For those with heart disease he recommends 500 mg to 1,500 mg daily.

Health Canada Advisory on L-arginine

Hello there,

If you (or someone in your family) have had a heart attack previously, then please read this information carefully.

 

Health Canada is advising patients who have previously had a heart attack not to use L-arginine supplements because of a recent study showing an increased potential risk of death when used after a heart attack.

 

L-arginine is an amino acid which is commonly used to sustain and promote healthy heart function. However, a recent study published in the Journal of the American Medical Association in January 2006 suggests that L-arginine may not help improve heart and circulatory function following a first heart attack and may be associated with an increased risk of death when used after a heart attack.

 

All L-arginine products must carry a warning on their label that reflects the recent scientific information. Health Canada has issued a stop-sale and recall on L-arginine-containing products that do not have the appropriate labelling. As well, products containing L-arginine must have market authorization before they can be sold in Canada.

 

For patients with heart disease who have not had a previous heart attack, taking L-arginine is unlikely to present a risk and may provide benefits since L-arginine may help the body repair damage to blood vessels in the heart.

 

Consumers who have used products containing L-arginine after a heart attack and have concerns about their health should contact their physician or health care practitioner.

Important information on cataracts

Cataracts are the leading cause of loss of vision for adults aged 55 and above.


The lens is the part if the eye responsible for focusing light and producing clear, sharp images.


The lens is made of mostly water and protein.

 

Over the years, protein can accumulate in certain areas of the lens, making images look blurred or fuzzy. The lens may also become cloudy.

 

Some symptoms of developing cataracts:

 

• Cloudy or blurry vision.

• Colours appear faded.

• A halo may appear around lights, or lights may appear too bright.

• Decreased night vision.

• Frequent prescription changes in your eyeglasses or contact lenses.

 

These symptoms also can be a sign of other eye problems.

 

For most people, cataracts are a natural result of aging. Cataracts may also occur as a complication to surgery for other eye problems (like glaucoma). Cataracts may develop after an eye injury. Some forms of radiation treatment can cause cataracts to form. They may also be linked to steroid use. There is also a congenital form where newborns have cataracts at birth.

 

Those who have diabetes, and who smoke and drink heavily, are also at higher risk for cataracts. Sun exposure is also linked to the rate of cataract growth, so wearing sunglasses or a wide-brimmed hat may help to delay growth.


Problems due to small or early cataract can be addressed by better eyeglasses, lighting, anti-glare sunglasses, or magnifying lenses. However the only effective treatment is surgery, where the cloudy lens is removed and in most cases an artificial lens is implanted. (In some cases a lens cannot be implanted and glasses or contact lenses are used instead.)

 

Vision problems caused by cataracts tend to develop slowly over time, so most people who have cataracts do not need to rush into having surgery. In fact many cataracts do not need to be removed.

But generally speaking, the decision whether or not to go ahead with surgery depends on the quality of vision. All surgery involves risk, particularly of infection. Cataract surgery is considered a safe surgery, and is extremely common.

The most common complication is clouding of the part of the lens that remains after surgery, necessitating another procedure to correct the problem.

Surgery also leaves patients at higher risk of retinal detachment, which can lead to blindness and is considered a medical emergency.

 

Fewer than 3 per cent of patients who have the surgery experience other, serious complications. These include swelling of the retina, which usually resolves itself, a new or different astigmatism, inflammation of other parts of the eye, development of glaucoma, and infection of the tissues in the eye (less than one per cent of cataract surgery patients experience this particular side effect). Some of these complications can leave patients with poor vision of blindness in the affected eye.

 

The operation lasts about one hour and many patients remain awake for it. Patients return quickly to every day activities, but their vision may remain blurry until the eye heals and adjusts to be able to focus properly.

Portion control plates aid weight loss

Hello there.

 

Here is an interesting idea for those of you who want to lose some weight.

 

A recent study at the University of Calgary has shown that, for people trying to lose weight, portion-control dinnerware may be the secret to success.

 

Researchers enrolled 130 obese patients with Type 2 diabetes to try out a portion-control plate, a commercially available piece of dinnerware designed to aid in weight loss. It has different sized sections on the plate divided into protein, starch and vegetables.

 

They followed these patients for six months, and used a control group receiving the usual dietary instruction for comparison.

 

Researchers found that patients using the special plate lost significantly more weight than those in the control group, the average being about 2.1 kg of weight loss in the plate group and 0.1 kg in the control group.

 

As well, 26% of participants using the plate were able to reduce their diabetes medication after six months, compared to just 11% in the control group.

 

You can try the same idea by mentally dividing your plate into imaginary sections – a larger section for vegetables and smaller sections for the protein and starch. Then STICK TO IT AND NO SECOND PORTIONS!

Selenium can reduce Cancer risk

Sunshine Cuts the Risk of Breast Cancer

Did you know that, according to new research, sunlight could help women in the fight against breast cancer?

 

Experts have warned that spending too much time in the sun can increase the risk of developing skin cancer. But women who avoid sunlight altogether are putting themselves at greater risk of being diagnosed with breast cancer.

 

The majority of vitamin D comes from exposure of the skin to sunlight, but many women are deficient.

 

There has been anecdotal evidence to suggest that breast cancer is less common among women who live closer to the Equator, where the sunshine is stronger.

 

And  a new study provides the firmest evidence yet that,  if she has passed menopause, the lower the levels of vitamin D in a woman’s blood-stream, the greater the risk of her developing breast cancer.

 

Of more than 1,000 women who took part in a trial, those who were given both calcium and vitamin D supplements had less than half the chance of developing breast cancer than those given a placebo.

 

A team of researchers from Creighton University in Omaha, Nebraska, enrolled 1,179 women all 55 or older, who had no history of cancer.

 

Divided randomly into groups, the women were given either supplements of calcium alone, calcium plus vitamin D or a placebo for four years.

 

When the researchers repeated the analysis for those women who were free of cancer after the first year of the study, the results were even more striking, with the risks being reduced by more than three-quarters.

 

“Our findings of decreased all-cancer risk with improved vitamin D status are consistent with a large and still-growing body of data showing that cancer risk, cancer mortality, or both are inversely associated with solar exposure, vitamin D status or both,” the researchers said.

 

“Findings from this study suggest that higher intakes of calcium and vitamin D may be associated with a lower risk of developing premenopausal breast cancer.”

 

Vitamin D is also present in foods including milk, eggs, oily fish, and green vegetables.
